Preserving the pan is vital by all means. In fact, in the past days cast iron pans would not be washed but wiped clean. Can you actually believe it that they thought complete removal of greasy layer would bring destruction. May be it would or wouldn`t but if you prefer this traditional method, please take extra care to keep the pan in a good cooking condition and a clean environment.
There are some that believe stainless steel frying pans are far superior to those with non-stick surfaces because they do not trust the non-stick materials. These are chemicals that could cook into your food, and they also tend to flake off after many uses, meaning you are eating bits of that non-stick material that is coming off of your pan. If you use stainless steel, you are using something that has been used safely for generations in cooking. You can feel better about the meals you prepare in these pans. They are harder to clean, but you deserve the best for your body.
Aluminum and stainless steel are durable metals that also conduct heat very well. A frying pan made out of either of these metals will require little maintenance. I love these metals for cookware but I have noticed that food tends to stick to the surface quite easily if not properly greased. Manufacturers created a non-stick coating known as Teflon to address sticking problems. While this coating does wonders for the sticking situation, it can peel after extended use. Peeling often occurs as a result of overheating. This is not a favorite of mine.
So again, the answer is yes, you can get this pan in either finish and I recommend you consider both. That way you`ll have a wonderful non stick surface for delicate foods like eggs and the normal stainless finish for higher temperature cooking like sautéing and grilling. Be sure to invite your friends and family over. It`ll be fun showing off your skills as well as your new pans.
