Several factors determine how healthy cookware is. The first cookware people tend to buy is the non-stick cookware. This cookware is healthier because it cuts down on the amount of extra liquid that needs to be added. However, this is only a portion of the concerns that determine healthy cookware. The quality of the cookware is also important. Cookware can only produce healthy food if it is made from good quality material that allows even and efficient cooking.
The Calphalon cookware is created from a process invented by NASA to create anodized aluminum cookware, which has the advantage of being very hard and smooth, naturally resistant to corrosion, and being non-stick as well. The first cookware products were created for professional chefs, but later the Calphalon products were brought to the consumer market.
No more burnt food bits to pick out of you dinner entree. This cookware is also a great tool for the health conscious because it allows them to cook with very little use of oils and butter, eliminating unnecessary calories while sealing in the taste. Then there is my favorite feature, easy cleanup. The nonporous surface does not allow food to stick so cleanup is as simple as a damp cloth and few drops of dishwashing liquid. Some brands claim to be dishwasher safe but I highly recommend hand washing as the harsh chemicals in most automatic dishwasher detergents is very hard on this type of cookware. But that`s not all.
Typically, clad cookware has outer layers of nickel stainless steel for durability, non-reactivity and for its shiny luster, an inner layer of either iron, carbon steel or magnetic stainless steel and another inner layer of either aluminum or copper for its high conductivity (the goal of this layer is to conduct heat evenly across the surface of the pan bottom for even heating). Some clad cookware will utilize magnetic stainless steel for the outside layer of the pan bottom rather than cladding the bottom in nickel stainless steel; this eliminates 1 layer while retaining all of the important properties of clad cookware. Because clad cookware has the best properties of several different materials, it is an excellent choice for induction cookware. There are several excellent high-end brands of clad cookware and numerous less expensive brands.
