This cookware set is constructed of aluminum with a porcelain enamel exterior and a non-stick interior. The aluminum core allows for quick and even heating of food, as aluminum is an excellent heat conductor. The outside of the cookware is porcelain enamel. Porcelain enamel is quite stain resistant and makes for very easy cleanup. The interior of the cookware is non-stick, allowing foods to easily slide from the pan onto your plate. Metal utensils will scratch the non-stick coating so the set does include 2 rubber utensils to allow you to easily remove the food from your pots and pans without damaging the interior.
Unlike gas and conventional electric cooking elements, induction elements do not heat up and then transfer heat to the pot or pan. Instead, they directly heat the pot or pan via magnetic hysteresis loss. While the home cook or restaurant chef has no need to understand the details of magnetic hysteresis, he or she must be aware that induction cooking only works with pans made of a ferrous (magnetic) material and will not work with aluminum, glass or ceramic cookware. In addition, although steel is normally magnetic, some stainless steels are actually non-magnetic alloys unsuitable for induction cooking.
There are many advantages to using titanium cookware. It is reputed to be healthier because you use less oil while cooking. The pans are supposed to be truly non-stick so you don`t need to use oil or water to cook your food, and which makes it easy to clean. Titanium cookware is very light, weighing less than other pots and pans which still retaining the strength needed for a solid piece. It also is very durable and lasts literally forever, and it resists dents and scratches. This type of cookware also heats quickly which reduces cooking times, but as a downside, titanium can be prone to `hot spots` which if not watched can cause food to burn.
Cookware made of all copper (or mostly copper) material is also very popular for quality cooking, as it does not have some of the chemical reactions associated with other materials. Although copper is an expensive material cookware, this is the type that most professional cooks use for many cooking techniques. It conducts heat efficiently and evenly, so you`re assured that your food is cooked in entirety.
